Nishiki's tonkotsu ramen is built on noodles and broth made in-house every day, with the kitchen visible to diners so they can watch the noodle-making process. The restaurant opened its Kearny Mesa location in 2015 and has since expanded, bringing Tokyo-style ramen to multiple neighborhoods. While the signature Smoke Bomb Black features black garlic sauce and pork, the tonkotsu represents the foundation of the menu. The transparency of the kitchen and daily fresh preparation create confidence in the quality of each bowl.
