Nishiki's tonkotsu ramen is built on noodles and broth made in-house every day, with the kitchen visible to diners so they can watch the noodle-making process. The restaurant opened its Kearny Mesa location in 2015 and has since expanded, bringing Tokyo-style ramen to multiple neighborhoods. While the signature Smoke Bomb Black features black garlic sauce and pork, the tonkotsu represents the foundation of the menu.
